Fresh & Local!

YEAH it’s that time again… Time to get FRESH with MATT DUSK! Fresh produce that is and it’s our theme for next week’s show. There is nothing better in this world than picking something straight from the earth and serving it up on your table the very same day! I spend a lot of time outdoors in the spring and summer. This year I am attempting a garden at the cottage-wish me luck- ANY TIPS WOULD BE HELPFUL!

My in- laws have a wonderful garden they tend to all season long. I think they grow at least a million types of heirloom tomatoes… so fresh and juicy! I love just drizzling them with a little olive oil and kosher salt or a few fresh herbs for a simple salad to go alongside any meal!

On the way to our cottage there are lots of local farmers’ markets and produce stands. Fresh potatoes, corn, beets, zucchini and carrots are all over the place. Grilled veggies make a nice flavourful alternative to regular salad fixings and they scream spring and summer to me! I also love grilling steak or chicken on the BBQ, slicing it up on a bed of mixed greens for a perfect warm salad main course. Wild blueberries, raspberries and strawberries make a nice colourful and tasty topper for any fresh salad too and kids love picking them!

But my fresh staple is definitely fresh herbs and lemon. I use them all year long but somehow they always bring out the best in fresh summer produce. What’s your go-to Fresh fix?
